First time making lobster bites, they came out good, we demolished them. The sauce added a little heat to the lobster bites but not too much, perfectly matched.
▪️2 1/2 pounds lobster
▪️2 cups breadcrumbs
▪️1 to 2 tablespoons milk
▪️1/2 teaspoon salt
▪️1 tablespoon mayonnaise
▪️1 tablespoon Worcestershire sauce
▪️1 teaspoon minced parsley
▪️1 tablespoon baking powder
▪️1 large egg, beaten
Now to create:
🔹Cook the lobsters and take out the meat.
🔹In a bowl put all the ingredients and mix well.
🔹Make cakes–trying not to pat them too firm–just so they hold their shape.
🔹Melt the butter in a fry pan and put cakes in it; fry slowly till golden.
Spicy Mango Sauce
1/2 cup sherry
1 large shallot, minced
2 ripe mangoes, peeled and chopped
1/4 cup freshly squeezed orange juice
2 tablespoons rice wine vinegar
1/2 teaspoon salt
1/8 teaspoon white pepper
1 teaspoons curry powder
Combine sherry and shallot in a medium saucepan. Cook over medium-high heat about 4 minutes or until reduced to 2 tablespoons.
Meanwhile, combine mangoes, orange juice, curry powder and vinegar in a blender. Process until smooth. Add pureed mango mixture to sherry reduction, and reduce heat to medium.
Cook 3 to 5 minutes or until mixture is slightly thickened. Remove from heat. Garnish with what works for you.
